Let them eat cake…
This recipe is DELICIOUS and most importantly SIMPLE. Great for adults and kids and contains no butter. Slice and toast for breaky, put in kids lunch box or eat on a whim.
1 cup dessicated coconut
1 cup self raising flour
1/2 cup sugar or less depending on taste
1 cup coconut milk
Preheat oven to 180 deg. Grease loaf tin.
Mix together coconut, sifted flour, sugar and milk. Pour into prepared tin and bake for 45 mins.
Thats it. So easy.
